So, we’re cribbing this series off of those lady magazines that ask, “What’s in your purse?” At some point, every vegan gets asked if they subsist on apples and whether or not yeast is vegan. Here’s a post that shows what, exactly, one might find in our lunches.
In my pink lunch bag, I brought some homemade chili. I also brought a book A Tiger in the Kitchen since you never know if anyone will be in the lunch room or whether they’ll be up for chatting. There was a chill in the air and it was starting to feel like fall. Nevermind the fact that fall in Central Texas is a brisk 90ºF, I was ready to pull on my knee-high boots and a cardigan.
While chili should technically not have beans, mine was filled with lentils and kidney beans. I also threw in some roasted corn and a red bell pepper for color. I would give you the recipe, but I did it all on the fly. Plus, you might see some variation of this at the Lone Star Vegetarian Chili Cook Off, which I hope that you all are planning to attend.
To round off the meal, I added a few pieces of toast and washed it down with water. I brought guacamole to add some healthy fat, but totally forgot to use it. It was a nice, filling meal.
